I've officially been in Austin a month now and BOY am I still in an adjustment period. I feel as if I'm adrift at sea and want so badly to drop a few anchors. I know those anchors will come in time. I've got to be patient...not one of my strong suits.
Jessica, being the best best friend that she is, sent Jeff and me the most thoughtful house warming gift. Two boxes of specialty sugars and spices arrived at my door and I was overwhelmed with surprise and gratitude, not just because of the (lovely) gift itself, but because I knew then that she was thinking of us.
I don't know if you've heard this about Texas, but the summers are HOT. I've been so hesitant to turn on the oven which is not a good thing when running a baking blog, but I figure most people like popcorn and this is certainly a dessert spin on the classic snack. It's kind of like kettle corn and it's kinda like caramel corn and it kinda rocks my socks.
I hope you try it and let me know what you think! Feel free to add in mix-ins like cinnamon, dried fruit, nuts...it's so versatile!
Honey Maple Popcorn
- 1/4 cup canola oil
- 1/4 cup popping corn kernels
- 1/8 cup white sugar
- 1/8 cup maple sugar (sub brown sugar or sugar in the raw)
- 1/8 cup water
- 1 tbsp. honey
- pinch of salt
Over low heat and in a small sauce pan stir white sugar, maple sugar, honey, and water until bubbling. It's ready when you can drag a wooden spoon through the mixture and leave behind a clean line.
Spread popcorn on a baking sheet and drizzle the honey maple mixture on top. When it's cool enough to handle toss popcorn by hand to coat evenly.
Honey Maple Popcorn is sticky but gosh DARN is it worth it.
