Cookies : Chocolate Chip

Was that a show or what? I'm still reeling from Beyonce's performance at this year's Superbowl. She. Is. So. Incredible. We watched the show at a friend's house and noshed on a baked potato bar (best idea ever, by the way) and these cookies. Chocolate chip cookies are simple and classic and so very all-American.

On a completely unrelated note, I got my bridesmaid dress in the mail this weekend! I ordered it from a Gilt.com sale. It was very coral and very nonreturnable so my fingers were crossed. It arrived and fits like a glove, and that's just one of my many blessings from this past week. Wanna know another? Jessica and I will get to see each other for longer than a few hours this May!! We've got plans a brewin' for blog projects and we can't wait to execute then share them with you.

I hope your week is as blessed as mine has been,
Ashley

Chocolate Chip Cookies
*recipe from Trader Joe's Semi-Sweet Chocolate Chips

That's right, this recipe is straight from the bag o'chips, but I've made them a time before and I'll be darned if they didn't garner lots of compliments at the office.
  • 2 1/4 cups all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 cup brown sugar firmly packed
  • 1/2 cup granulated sugar
  • 1 cup softened butter
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 package Trader Joe's Semi-Sweet Chocolate Chips
Preheat oven to 375 degrees. Combine flour, salt, and baking soda in a bowl and set aside. Combine brown sugar, granulated sugar, softened butter and vanilla and beat until creamy. Add eggs and beat. Add half the dry ingredients and mix well then add the second half of dry ingredients and mix again until just combined. Stir in chocolate chips. Drop mixture by rounded teaspoonfuls onto non-greased cookie sheets. I rolled the teaspoonfuls into balls by hand to hold the cookie mixture together. Bake 8 to 10 minutes or until bottom and sides of cookies just begin to brown. Recipe yields approximately 2 dozen cookies.
