Lemon Glazed Sugar Cookies


Happy New Year! Wow, one week in and though I didn't make any hard and fast resolutions, I did make a promise to myself to be better. In every sense of the word, I want to be better. I'm starting small, I've been taking a daily vitamin and have been sweating everyday. I hate to work out, I hate the word exercise. I am a bonafide couch potato. However, as I've mentioned before, I'm obsessed with Just Dance and have started doing the Just Sweat workouts on the Wii. Whew! My favorite way to get some cardio for sure.


Have you made any new year's resolutions or promises to yourself? We had such a fun NYE spending the evening with friends and getting our kisses at midnight. I brought these glittery gold simple sugar cookies. As darn delightful as sugar cookies are on their own, I wanted to incorporate a bit of flavor and I did so by making a lemon glaze which I've used before on my favorite muffins ever. The "sparkles" on top are just a bit of Sugar in the Raw I sprinkled on shortly after I glazed the cookies and before I popped them into the fridge to set.

Sugar Cookies
*recipe found here
  • 2 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup softened butter
  • 1 1/2 cup white sugar
  • 1 egg
  • 1 tsp vanilla extract 
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Lemon Glaze
  • 1 cup powdered sugar
  • Juice from 1/2 lemon
  • Zest from 1/2 lemon
  • 1 tbsp milk (add more or less for desired consistency)
  • 1/4 cup light corn syrup
Mix everything together and adjust for desired consistency. Add more powdered sugar for a thicker consistency or milk for a thinner consistency.
